NPC Career Cheats

Interestingly, while Horse Ranch doesn’t add new careers for playable Sims, it does introduce three NPC-exclusive roles. With the following cheats, you can assign these roles to your active Sims:

However, once you move away or travel from the lot, the job will be permanently removed from your Sim’s career overview.

If you want to keep these roles active, navigate to Options > Manage Worlds > Manage Households and uncheck the heart/favorite icon on the household portrait, designating them as unplayed. This will help assign NPC roles until you next play with that household.
